Nicolette Hahn Niman is a rancher, former environmental attorney and author. She has written three books about sustainable and regenerative meat generation, including her latest “ Defending Beef: The Ecological and Nutritional Case for Meat,” and has been a contributor to The New York Times, the Wall Street Journal, the Los Angeles times, and The Atlantic.
