This week, we welcome Dave Foss who has worked in hospitality for over 27 years in virtually every facet of the food and beverage industry. He is currently a partner at Invictus Hospitality a food and beverage consulting firm that works with hotels and restaurants across the United States. He is also an Operating Partner at LaLou, a beloved wine bar in Prospect Heights, Brooklyn. His passion for beverage led him to manage a series of programs on the West Coast, both at the Mondrian Hotel and later at Fairfax Partners Restaurant Group, overseeing four properties in the Los Angeles area. Upon returning to the East Coast, Dave went on to oversee the beverage programs at the Soho and Tribeca Grand Hotels in Lower Manhattan. Welcome to episode 1174, another installment of 'On The Road Edition', hosted by Stevie Kim. Today Stevie sits down with Giulia Di Cosimo of the Argillae Winery. More about today's show: Stevie visits Argillae winery in Orvieto, Umbria. She was introduced to the territory and some of the wines such as Panata, Vascellarus and Primo d’Anfora, a white wine fermented and sharpened in terracotta amphorae. The Argillae winery owes its name to the Latin word for the clay in which the terroir is rich. There are approximately 38 hectares of vineyards, situated at an altitude between 150 and 300 metres above sea level, with an east-west exposure on sunny hillsides. Its founder was Giuseppe Bonollo, who came from an important family of distillers. Today, the winery is managed by new generations of the Bonollo family. Some of her earliest memories were set in her grandmother's kitchen, where homegrown food was cooked daily over an open fire pit. “My grandmother taught me the beauty of simple food, prepared well,” says Laura. “This is the philosophy I bring to my winemaking.
